 Saudi Mini-Series.

I'll explain the discrepancy with the year of release & episodes below:

IMDb lists Six Windows in the Desert's release date as February 2020, however that's the Netflix release date for the Series. In reality, "Six Windows in the Desert" is in fact a compilation of 6 individually made, unrelated, short movies from roughly 2016-2019 by the same studio (Telfaz11) with some minor edits (e.g. Episode 1 having updated information in the epilogue credits).

Ep.1: Wasati (2016)
Ep.2: Is Sumiyati Going to Hell? (2016)
Ep.3: Predicament in Sight (2017 according to Telfaz11 & IMDb, 2016 according to Netflix)
Ep.4: The Rat (2018 according to Telfaz11 & Netflix, 2019 according to IMDb)
Ep.5: 27th of Shaban (2018 according to Telfaz11 & IMDb, 2019 according to Netflix)
Ep.6: Curtains (2018)

Each of these episodes have their own separate IMDb pages as well (check the links above).

I'm not sure if we should put the release date as 2020, 2016-2018 or else, should we list those episodes separately or as one single series? thoughts?

Depends how you feel it, if it is better to have all six together as a series with episodes numbers, or rather as separate pages.
From what do you make the captures? If it is from Netflix, maybe rather do it like them, as a series, in case the separate movies were a little different.

If we list them in one series page, it would be good to create the individual movie pages without listing cars but with just a link in the comments that redirects visitors to the series pages.
And if we list them in separate pages, we can put in the series page the links to each individual pages and keep the series page empty of cars.

For the year of the series, I suppose we could keep 2020 and use the older years on each individual movie pages.

 I'm taking these captures straight from Netflix.

Now that I'm looking through it, I'm still not sure.
The themes are different between one episode and another ("The Rat" in particular is quite different from the rest).
There's also the fact that only 2 out of 6 episodes contains any road vehicles.

Either of your suggestions works fine.
